Seeking a reference for a cook; asking if she is "...perfectly sober, honest, and trustworthy - the latter is of much consequence, as my cook does all the marketing for me. Is Catherine a good cook can she make good breads & pastry, cook fish & game nicely & make soups? Is she clean in her kitchen and utensils and is she active and willing and 'tho' last not least', is she good tempered? I am sorry to trouble you with being thus particular, but I have been so very unfortunate since I lost my old and faithful servants, who married from our service, that I am most desirous to get a cook who would be likely to remain with us, and equal to the place;" asking for her reply and apologizing for the trouble she has given her.
